A Thanksgiving Treat... Gale's Fruit Cocktail Cake

Gale’s World Famous Fruit Cocktail Cake

Prep time: 20 min Cook time: 30 min

Cake Ingredients:

2 eggs
1 medium can fruit cocktail (15 oz)
2 tsp. baking soda
1 tsp. salt
2 cups + 2 tbsp flour
1 ¼ cup granulated white sugar

Top cake with the following before putting into oven:

1 cup crumbled brown sugar
1 cup chopped nuts (optional)

For Glaze:

1 cup evaporated milk
1 cube salted butter
1 cup granulated sugar
1 tsp. Vanilla extract

Directions:

Preheat oven to 350°. Combine Flour, baking soda, sugar and salt and stir. Add 2 eggs and the can of fruit cocktail. Stir until all ingredients are well mixed and look like cake. Put in a 10” x 13” ungreased baking pan. Crumble over the top brown sugar and nuts (if desired).

Bake at 350° for 25-30 minutes. The top of the cake will look uneven - test in the center of the cake with a toothpick (it should come out clean) but don’t bake too long.

While the cake is in the oven, combine the glaze ingredients and cook on the stove, stirring constantly until it is almost soft ball stage, approximately 10 minutes.

Take the cake out of the oven and immediately pour the glaze on the top of the hot cake and let it sit. Do not try to take cake out of the pan - it is best left in the pan. Serve warm with whipped cream.

NOTE: Cake will be very moist and almost like a coffee cake. It can also be served cold with a dollop of whipped cream and cherry on top.
